Undhiya Masala
INGREDIENTS (In powder form): Coriander, Cumin, Chilli, Black Pepper, Cinnamon, Mace, Bay Leaves, Clove, Anistar, Szechwan pepper, Turmeric, Iodised Salt, Dry mango, Curry leaves, Black Stone Flower, Coconut, Citric Acid
NOT CURRY POWDER
Undhiya Recipe:
Heat 2 table spoons of oil in a frying pan and add one spoon of fenugreek seeds (methi), 2 teaspoon ofcrushed ginger and stir fry till brownish in appearance and add puree of 3-4 tomatoes, and 2 teaspoons of BAPS Amrut chilli powder, 3 teaspoons of salt, 2-3 spoons of BAPS Amrut Undhiya masala, 1 teaspoon of BAPS Amrut turmeric powder, 1 teaspoon of BAPS Amrut Jeera powder and stir fry till oil separates.
Now cut evenly 3-4 potatoes, one brinjal, 50 gms of French beans, 50 gms of suran, 50 gms of ratalu, 50
gms of surti papdi, and add pre cooked muthiyas and mix properly. Cover and allow to cook on low flame for 20 minutes and ensuring the vegetables do not get over cooked. Stir occasionally.
Then garnish with finely chopped coriander and coconut flakes and serve hot with hot roti, puri or nan.
